Here’s What You Will Need

  • unsalted butter (2 tablespoons)
  • extra-virgin olive oil (2 tablespoons)
  • 3 garlic cloves (smashed)
  • 1 cup water
  • Canned whole tomatoes in their juice (use three 14-ounce cans or 5 cups)
  • 1 thinly sliced medium onion
  •  heavy cream (2/3 cup)
  • sugar (1 tablespoon)
  • crushed red pepper (1/4 teaspoon)
  • celery seed (1/4 teaspoon)
  • dried oregano (1/4 teaspoon)
  • freshly ground pepper and salt
  • four 3/4-inch-thick slices of white country bread (diced)

Step by Step Instructions

  1. First, heat a medium-sized saucepan. Melt 1/2 tablespoon butter and 1/2 tablespoon olive oil. Stir continuously. This should take around 5 minutes. Be sure to not let this burn. Now, grab the heavy cream, sugar, water, tomatoes, crushed red pepper, celery seed, and oregano. Add these ingredients to the saucepan and crank up the heat to high. Don’t forget to season with salt and pepper as well. Use a spoon to break down the tomato to ensure there are no large chunks.
  2. Second,  you will also need a small skillet. It’s time to make some croutons! You will use the remaining amount of butter in this pan. Melt it until it becomes brown. Now, dump the mixture into a bowl. Cook the bread bits in the skillet for around 5 minutes. After, mix the bread bits with the butter.
  3. The third step might be the most important to having creamy tomato soup. You will use a blender to puree the soup. Once you have done this in batches, transfer all of the soup back to a clean pot and reheat it before serving. When it’s time to dig in, top with your buttery, homemade croutons.
