Are you looking to save some money yet dive into a decadent dessert that would typically sell for a hefty price? If so, you have come to the right place as we know of a famous chocolate wafer icebox cake recipe that will have your family fighting for seconds. Everyone loves this cake. The best part is that it is super easy to make and needs few ingredients. In fact, the most time-consuming part of the recipe is letting the cake sit in the refrigerator overnight so that the cookies and whipped cream soften up and form a cohesive cake. Read below for the full recipe. Enjoy.

Ingredients

  • Three boxes of Nabisco Famous Chocolate Wafers
  • Four cups of whipping cream (You can use either Cool Whip or Light Cool Whip, depending on your preferences)
  • Three tablespoons of sugar.

Instructions

  1. The first step is to combine the whipping cream, sugar, and vanilla in a large bowl. Beat the mixture until light and fluffy.
  2. Spread a couple of tablespoons of whipped cream onto a large serving platter. This will hold the bottom cookies in place.
  3. Place eight wafers in a circle on the larger serving platter. Leave room to place four on top to make a solid layer.
  4. Top the layer of cookies with whipped cream. Repeat this step for another 10-11 layers. Finish with whipped cream on top. Sprinkle with leftover broken cookies.
  5. Wrap the cake in plastic wrap and refrigerate overnight until the next evening.
  6. Remove and carefully slice.

You must let the cake sit for an extended period in the refrigerator. The whipped cream and chocolate wafer will slice perfectly if you let it sit overnight and until the next evening.

There are several ways that you can design this cake: you can make it in a tiny stack in trifle cups, you can make freestanding stacks, you can make it into a round cake, or you can make it into straight logs or into any shape that you want.
