Here’s what you’ll need to make the perfect potato pie:
1 sweet potato ( one pound, skin on)
½ cup softened butter
1 cup white sugar
½ cup milk
2 large eggs
½ teaspoon nutmeg
½ teaspoon cinnamon
1 teaspoon vanilla extract
1 9-inch unbaked pie crust
Soften the Potato
To get started, pre-heat your oven to 350 degrees F. While the oven comes up to temperature, put the sweet potato in a pot and fill the vessel with water until the spud is completely submerged. Bring the pot to a boil on the stove, then take it off the heat when the potato can be easily pierced with a knife. This should take about 40 to 50 minutes. Next, run the potato under cold water, then peel the skin away.
Make the Mix
Now that the sweet potato is ready to work with, you can break it down in a large bowl. Next, mix in butter with an electric mixer until the blend is smooth. Add the spices and extract next, beating the mix until everything is fully incorporated. When it’s all blended together, pour the mix into an unbaked pie crust and ease it into the oven for 55 minutes to an hour. You’ll know the pie is ready when you can insert a knife in the middle and pull it out clean, with no mix on the blade. The pie might puff up a bit while still hot, but it should flatten out as it cools down. Remember to let the pie cool before serving so that it doesn’t melt whatever topping you might want to add.
