It’s almost time for the kids to go back to school. We’re heading out to find the perfect backpack, check off all the school supplies, and pick out that all-important first day outfit. But there’s one other back-to-school planning element that’s not to be overlooked: what to pack in their lunches. Here are a few ideas for easy school lunches to get the year started off right.
Taco Pockets
These taco pockets are cute, easy to eat, and a great way to use up leftovers from taco night. Simply spice up ground beef (or whatever protein you have on hand) by combining it with a few other ingredients. Spoon it onto rectangles cut out of pie dough. Then add cheese, top with more pie dough, press the edges to seal, and bake. These are great dipped in salsa or guacamole. They also freeze well.
Chicken Biscuit Cups
It doesn’t get much easier than this recipe for BBQ chicken cups. Just open a can of flaky biscuits. Tear each one in half and place the halves in the bottom of a muffin tin. Top with chicken and shredded cheese, and bake. Add some veggies and Ranch dip on the side, and you’ve got a complete meal.
Pepperoni Pizza Dippers
With all their favorite ingredients rolled into one, this cheesy pepperoni pizza stick recipe is sure to please. Simply cut a pizza dough into rectangles. Line the center with pepperoni slices, add a mozzarella stick, roll it up, brush with butter, and bake. Serve with warm marinara sauce for dipping. These can be made ahead or frozen in batches for future lunches. They also make great snacks.

Mac ‘N’ Cheese Muffins
Another great way to use up leftovers, these ham and mac ‘n’ cheese muffins are always a hit. Mix 2 cups of mac ‘n’ cheese with 2 eggs, a cup of diced ham, and 1/4 cup breadcrumbs. Place this mixture in muffin cups, sprinkle with additional breadcrumbs, and bake. Keep them refrigerated until they’re ready to go into the lunchbox. Add some fruit, and lunch is ready!
