Now that school is starting back, weeknights just got a whole lot more hectic. Between homework and after-school activities, it’s hard to find the time to get a delicious meal on the table. Here are a few of our favorite dishes that come together with very little preparation, and even less clean-up.
Skillet Lasagna
What makes this saucy skillet lasagna meal so simple is the no-cook noodles. Everything layers together and simmers in one pot on the stove-top. Add a salad and some crusty bread, and you have an easy weeknight meal the whole family will love.
Outside-the-box Pizza
Pizza…yum. Chicken nuggets…yum. This chicken cordon bleu pizza recipe combines a few of everyone’s favorite things in one easy-to-prepare dish. It’s so creative we wonder why it isn’t on the menu at pizza joints everywhere.
Sausage and Veggie Skillet
Not only is this meal quick and easy, it’s a great way to use up produce (or even meat) that you already have on hand. The recipe calls for sausage, corn, and spinach, but you could just as easily throw in ground beef, green beans, carrots, or whatever else you have in the fridge.
Meatloaf Muffins
Not only is this meatloaf cooked in a muffin tin a great option for dinner, it also freezes well for even busier weeknights in the future. This recipe will require a side dish, but some easy mac & cheese and steamable frozen veggies work great in a pinch.
White Cheddar Mac & Cheese
Speaking of mac & cheese, here’s an easy recipe you can whip up while the meatloaf cooks in the oven. Again, you can use any small pasta you have on hand. We like conchiglie because its shape helps it hold a ton of melted cheese inside.

Shrimp Skillet
Because there’s so much sauce in this Cajun shrimp skillet recipe, it’s great served alongside some crusty bread for soaking. You can also serve it over grits or toss it with your favorite pasta for a complete meal.
